Bizcochitos A real New Mexican Tradition - recipe

The inn is all decorated for Christmas and it is a cold snowy day. It would be a great day to make bizcochitos,a wonderful New Mexican cookie dating back from territorial days. I am including the recipe if any of you want to make them. It is one of the only recipes I use lard in and it does make a difference.

We still have availability for Christmas and New years so don't wait to make your reservation. We are filling up fast. Christmas is a magical time in Santa Fe. The farolito walk is on Christmas eve and is beautiful. The historic east side residents and galleries light candles in paper bags filled with sand and build small fires for carolers to warm up by. There is hot cider and if there is snow it is even more special. The Plaza is all lit up and the Cathedral welcomes everyone.

Bizcochitos

1 cup lard
1/2 cup sugar
1 egg
3 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon anise seed
3 Tablespoons sherry
1/4 cup sugar
1 Tablespoon cinnamon
Cream lard and 1/2 c sugar till quite creamy. Add egg and beat till very fluffy. Sift together flour ,baking powder and salt and add to creamed mixture and combine. Stir in sherry and anise seed. Roll dough out onto floured board about 1/4 inch thick and cut into shapes with cookie cutter. Combine 1/4 cup sugar and 1 Tablespoon cinnamon and sprinkle on top of each cookie. Bake in a pre- heated oven at 350 for 15 -20 minutes or until light brown. Makes 4 dozen small cookies.
